Camilla's Kaffe in Fruita Has New Owners

Camilla’s Kaffe has been a staple in Fruita since it opened over 12 years ago. Now, James Montoya is the proud new owner of the establishment, and he is excited to share his passion for cooking with the rest of the Western Slope community. 

Montoya grew up in Albuquerque, New Mexico, in a family that has always valued food and how it brings people together. His great-grandmother was a cheese maker and vegetable gardener, who “knew how to use an animal from hoof to tail.” At 6 years old, his adoptive grandmother began teaching him how to bake bread and Italian desserts from scratch, which inspired him to pursue his love for cooking. Now, Montoya has over 40 years of experience working with chefs nationwide. He has lived in nine states and collaborated with world-renowned chefs such as Emeril Lagasse and Wolfgang Puck.

Montoya was drawn to Mesa County’s vibrant artisan culture and central location on the Western Slope. “I’m fascinated by the farmers, ranchers and winemakers who are so passionate about what they do in Mesa County,” says Montoya. “Colorado has unsurpassed beauty and diversity.” He moved to Fruita and bought Camilla’s Kaffe in 2024, and he is thrilled to share his love for food with the community. 

Since purchasing Camilla’s Kaffe, Montoya has made several renovations. He has expanded the restaurant menu to include dinner along with breakfast and lunch, with new items such as Louisiana gumbo and pork tenderloin medallions. Additionally, he recently installed an all-electronic exhibition kitchen so customers can watch their food be prepared, complete with a chef’s table at the front of the house. All of the bread and pastries served are made from scratch, and Montoya uses a 100-year-old sourdough starter to bake all of the bread. The chef recommends the house-dry-aged New York steak and house-made Oregon Trail bread.

“I’m trying to run Camilla’s with passion, love and humility,” says Montoya. He is committed to providing warm hospitality at Camilla’s and upholding its place as a pillar of the Fruita community.
