Introducing “All Day Verde” — A Summertime Wine From Sauvage Spectrum & Spoke+Blossom

Palisade winery Sauvage Spectrum and Spoke+Blossom magazine are partnering to bring you All Day Verde, a limited edition light and effervescent white wine sure to elevate your Western Colorado summer.

Patric Matysiewski, Sauvage Spectrum co-founder and winemaker, describes the special collaboration wine, saying, “All Day Verde is 73% albariño, 21% grüner veltliner and 6% riesling, 100% grown, produced and bottled in the Grand Valley ... Young, bright and crisp with a hint of fizz, white melon, goose berry and lime blossom flavors contrast the delicate body with underlaying mineral tones.” Grown and crafted eco-consciously, this Vinho Verde variation that we’re calling All Day Verde captures the essence of Colorado.

From every bottle, a portion of proceeds are being donated to One Riverfront, a Grand Junction nonprofit striving to foster community stewardship and enhance the Colorado and Gunnison River corridors.

Even the wine label pays tribute to our colorful state. “When creating this design, I wanted to represent the area where the wine is made,” says Shannon Kennedy, the talented local designer that created the All Day Verde label. “I wanted this illustration to evoke a summer Colorado day and also tie back to the name of the wine, with a lush green landscape and vineyards.”

In his grape growing and winemaking, Matysiewski keeps climate change in mind; from the vineyards to the cellar, Sauvage Spectrum implements eco-conscious routines such as limiting chemical use and using the leftovers from pressed grapes as compost to contribute to the soil diversity.

The Grand Valley is a special place to grow grapes because it is a high desert and typically gets hot during the day and cool at night, resulting in near perfect conditions for the grapes to ripen and retain acidity. In August of 2022, however, the valley got unusually hot, forcing grape growers to adapt and evolve. All Day Verde is a direct result of the heat.

“You’re tasting the climate change with this product,” Matysiewski shares. “Mother Nature threw us a curve ball; it was just so hot so early that we were seeing ripeness sooner than we’ve ever seen it, and to combat rising PH on my wine — because I don’t want to add acid, I don’t want to add water — we just went ahead and picked it.”

The goal with a good wine is balance, as Matysiewski points out, which is exactly what him and the Sauvage Spectrum crew were able to accomplish with All Day Verde. “[All Day Verde] is really going to sit well on a hot day … and make sure you recycle your glass when you’re done with it.”

Matysiewski is always looking for ways to give back to and support the community. “This is our life, this is what we do. We’re a small family business, and our focus is only supporting Colorado agriculture by any means possible.”

This is why he says he is excited to be partnering with Spoke+Blossom and One Riverfront. As he says, Spoke+Blossom is the number one magazine that captures the Western Colorado lifestyle and supports his beloved communities, and, “[One Riverfront’s] idea to be a community steward for the Colorado and Gunnison Rivers is very important to us because the snowmelt that goes into the river feeds our vines,” he adds; a reminder that our ecosystems are cyclical, and how we participate in our communities matters. 

“You’re tasting the valley,” Matysiewski states proudly. All Day Verde is light and homey, and the wine is also a reminder of the very real effects of climate change on our beautiful state. By supporting local winemakers that value transparency and other local, eco-conscious businesses, Colorado communities continue to be trailblazers, honoring and enjoying the earth and continuing to evolve in the face of climate change.
